A Light and Local Abbey Beer for Stavelot

An abbey without its own beer: that just doesn’t make sense,” thought the leaders of Stavelot Abbey. That’s why the institution partnered with Peak Beer brewery, based in Sourbrodt, to create and officially introduce the brand-new “Stavelot Abbey Beer.”

A Year of Work and Tastings

The creation of this beer is the result of a close collaboration that lasted about a year between the Sourbrodt brewery and Stavelot Abbey. The process involved numerous work sessions and tastings.

“Peak Beer submitted various products to us. Sometimes, we wanted a bit more of this or a bit more of that. Then, we worked together extensively and finally arrived at a beer that we all loved,” explains Patrick Mignon, Director of Stavelot Abbey.

The Beer’s Characteristics

This new brew is deeply rooted in its region through its ingredients and design:

  • The key ingredient: The beer is brewed with water from the Hautes Fagnes plateau. Andy Finck, from Peak Beer brewery, emphasizes its importance: “For a good beer, you need good water. And the collaboration with Stavelot Abbey, which is close to the brewery, is also local.”
  • The profile: It is a light, clear beer (blonde/hell) with subtle malt and fruit notes.
  • The design: The bottle features the Wolf of Stavelot.

High Production Ambitions

For the launch, the Sourbrodt brewery produced an initial volume of 5,000 liters. However, the partners have set significant growth targets compared to other beers in the Peak range.

The creators aim to scale up quickly so that this new product accounts for 25 to 30% of the brewery’s volume in the short term, with the ambition that the abbey beer will make up at least 50% of production within one to two years.
