Discover the behind-the-scenes of this store that excites the hearts of epicureans.
1. A Rigorous Selection: The Art of Finding Gems
The beer selection is far from random. The store works closely with certain microbreweries and has a dedicated department for purchasing craft beers.
Laurent’s Role: As the purchasing manager, he scours the network to find the latest innovations. Some breweries even come to present their samples directly in the store.
The Selection Committee: Each new beer tested goes through a thorough referencing meeting. The selection is based on strict criteria:
- Price
- Quality of the finished product
- Taste accessibility
- Originality
2. The Pulse of the Market: Current Trends
Tastes evolve, and the team closely follows the major trends in the brewing world:
- Current Stars: IPAs, particularly NEIPAs (New England IPA), continue to massively appeal to hop lovers.
- Classic Favorites: Traditional styles retain a loyal and steadfast audience.
- The Alcohol-Free Revolution: There is a strong rise in alcohol-free beers, responding to a growing demand for lightness and responsible consumption.
3. The Adventure of "To Touille": When Employees Create Their Beer
Following the end of Saint-Joseph production, Brasserie Delsart wanted to bounce back by directly involving its teams. The story began during a staff day in the form of a workshop, organized at Brasserie de la Houppe.
The Concept: Each team had to design their own brew, give it a name, and imagine a first draft of the label (later refined).
Origin of the Name: One of the teams couldn’t stop stirring the mixture. The name TO TOUILLE (directly referencing the action of stirring) imposed itself naturally.
Evolution: Initially brewed at Atrium, production is now handled at Brasserie Minne. It comes in several formats (bottle, can, keg) as well as an exclusive version aged in Rye Whisky barrels.
4. Events, Equipment, and Perfect Pairings
The store doesn’t just sell in-store but also offers comprehensive support for your festive projects:
- Event Logistics: A dedicated event service is provided from the Fernelmont hub, as well as from the Ciney and Gedinne stores. Thanks to a partnership with M&P Location, it’s possible to rent all necessary equipment (benches, brewing tables, refrigerators, beer pumps, etc.).
- The Art of Pairing: The team also provides expert advice on food and beer pairings, covering a wide range of combinations between beers, wines, and spirits.
5. Animations, Sharing, and Communication
To keep the passion for taste alive, the store relies on regular meetings with its community:
- Organization of masterclasses (beers and spirits).
- Workshops dedicated to beer pairing.
- Management of the Drink Me Up festival.
- Tastings on certain Saturdays.
